  1. Add dahi and 11/2 to 2 cups of water in the rice flour with baking powder. Keep it aside for couple of hours
  2. Wash the banana leaves, cut them into square shapes. Grease the banana leaves with oil on one side. Heat the tawa
  3. Add cumin powder, ginger chilli paste and salt to the batter and mix well
  4. Apply thin layer of the batter to one leaf and put the leaf on the hot tawa. Place the other greased leaf on top of it
  5. Cook both the leaves until light brown spots appear
  6. Serve it hot with green chutney

  1. Roast all the paste ingredients in oil and when cooled blend everything to form a smooth paste
  2. Soak the dals for 2 hours. Pressure cook it with adding 3 cups of water, turmeric, tomatoes, salt and green chilli paste
  3. Heat the pan and add oil in it. Sauté cabbage and spinach for 5 mins
  4. Add the cooked dal, ginger powder, sugar, prepared paste and 1/2 cup water and boil it
  5. Cook for 10 mins, add lemon juice and serve it hot

  1. Boil the corn in water or vegetable stock for 10 minutes till the corn is tender
  2. Add the grated corn and cornflour paste and cook for 5-10 minutes. You can add grated cabbage as required (cabbage is optional)
  3. Add sugar, salt and pepper and serve hot
  4. You can serve it with chillies in vinegar, soya sauce and chilli sauce.

  1. Heat Oil for seasoning
  2. Add mustard seeds and when they being popping add asafoetida, dry red chili, channa dal, urad dal and mix.
  3. Let it become light brown and add sooji in it and roast till it turns light brown
  4. Allow the sooji to cool down in another bowl for 10 minutes
  5. Prepare Idli steamer by pre-heating water to a boil.
  6. Grease the idli tray with little oil
  7. Add the curd, curry leaves, green chilies, cilantro, ginger and salt. Mix well until no lumps visible
  8. Add eno into it and mix well
  9. Pour the batter immediately
  10. Steam the batter for 15-20 minutes
  11. Serves it hot with chutney sambhar

  1. Keep the oven to pre-heat at 200 degree C or 390 F
  2. Mix the curd and oil and keep it aside i the big bowl
  3. Mix all the dry ingredients and add it in the big bowl
  4. Mix it well
  5. Add water if needed. The batter should be dripping consistency
  6. Grease the bottom of the baking tray with oil and pour the batter in it
  7. Bake at170 degree C or 338 F for 1 hr 15 minutes
  8. Allow it to cool down and cut it into equal pieces and serve.

  1. Add oil and water to the ready packet Khaman dhokla and steam it for 15 mins
  2. Shred the raw papaya and add salt to it and keep it aside for 20 mins
  3. Remove the water from the papaya after 20 mins
  4. Take some oil in the pan, add mustard seeds, green chilles and curry leaves to the seasoning and add papaya to it.
  5. Cook it well for about 10 mins
  6. With your fingers powder the Khaman dhokla and add the cooked papaya to the Khaman.
  7. Garnish it with finely chopped corainder leaves and eat it with hot fafada.

Rava Dosa

  1. Mix all the ingredients except oil and jeep the batter for about 1 or 1/2 an hour
  2. Rava will soak water so at the time of making dosa you might have to add little water. The batter should be of pouring consistency (thick buttermilk)
  3. Pour the dosa batter from the outward base of the tawa in a circular motion. Fill the gap in the middle with dosa batter. Don’t drop batter like a thick lump but pour all over, evenly, filling the gaps. Pour 1-2 tsps of oil like drops along the edge of the dosa and the gaps in the middle.
  4. Cook it on medium heat for 3 minutes and then on high heat for 1/2 a minute. Remove the dosa if you want slightly soft
  5. For crispy dosa cook for another 1minute on high heat until it turns Golden brown in color
  6. You can Flip the dosa and cook it on other side but usually I cook only on one side
  7. Serve it hot with coconut or tomato chutney. (or sambhar)

  1. Heat 3 tbsp ghee in a thick bottom pan, add mustard seeds and allow them to pop, add asafoetida/hing, whole red chilli, urad dal
  2. When urad dal becomes little red add rava/soji in it and roast it till it turns light brown
  3. Transfer it to another deep bowl and allow it to cool for about 10-15 minutes
  4. Add curd/dahi, salt, chilli ginger paste, curry leaves, corainder leaves and mix it without any lumps
  5. Add water little by little to make idli batter to dropping consistency
  6. Grease the idli moulds and heat the water in the steamer until it boils
  7. Add eno/fruit salt in the batter and stir it. Immediately pour the batter to the idli mould
  8. Steam it for 15 mintues, cool down for few minutes, unmould it and serve it hot with chutney sambhar

  1. Wash the dates and imli and place them in a deep thick bottom pan
  2. Add the rest of the ingredients in it
  3. Simmer for about 25 to 30 mintues
  4. Let it cool down.
  5. Churn the chutney in the mixture or boss
  6. Strain the mixture through a sieve
  7. Store it in an air tight container in the refrigerator.
